Dinner for two!

Tonight for dinner, I decided I was going to make something a little different. My husband loves them & I don’t mind them. Ribs. Mmm! I figured this dinner would be one last good homemade meal before the husband leaves.

The start of these wonderful ribs made my entire mouth water! These were a whole rack and I cut them in half to split amongst the two of us. My other half wasn’t eaten as much as my husbands. The ingredients are:

1 rack of baby back ribs, halved

2 teaspoons of salt

1 teaspoon black pepper

2 teaspoons paprika

1 teaspoon cayenne pepper

2 teaspoons dried oregano

1/4 cup brown sugar

1 cup barbecue sauce (any bar be cue sauce works!)

1 pound green beans (I substituted this for corn)


Preheat oven to 275 degrees F / 140 degrees C

Season the ribs with all ingredients except barbecue sauce. Rub in seasonings evenly on both sides

Place both ribs in a baking sheet lined with foil.

Cover the ribs with foil and bake for 2 hours

After the ribs are cooked for 2 hours, increase the oven temperature to 500 degrees F

Carefully uncover the ribs and spread barbecue sauce evenly on top of ribs.

Place green beans or corn on the cob on the sides of the pan. Season either one or both with salt.

Bake for 10 more minutes

Transfer the ribs to a cutting board

Cut between the bones to separate into individual ribs. Serve with green beans or corn on the cob.
